Chicken & Orzo Soup

Ingredients

  • 2 bone-in Chicken Breasts from Whole Foods

  • 1 leek

  • 3 carrots

  • 3 celery cticks

  • 3 garlic cloves

  • 6 cups of chicken broth

  • thyme and parsley bundle

  • 1 package of orzo

  • 1 cup white wine


Method

  • Brown chicken breasts in a large dutch oven, remove

  • Add diced leek, carrots and celery and cook till tender

  • Add garlic and cook until tender

  • Add 1 cup of white wine and deglaze the pan

  • Add chicken and chicken broth and add water to cover chicken

  • Add thyme and parsley bundle

  • Cook 1 hour in 350 degree oven

  • Remove from oven and add orzo, let sit for 20 minutes until orzo is plump

  • Remove chicken from pot and shred, then add back to pot
